So, given that they haven't looked at my app yet, would it help at all to keep them updated? You know, like a letter of continued super interest or something?

Of course, an improved retake would put you in the running for better schools, so hopefully you did well! Good luck.

Would it be uncouth of me to send some kind of "hey, I'm still really interested letter"? I sent my app in early November.
