I am Canadian and a 162-165 will get me into all the top law schools here except Toronto where I need a 167+

Maybe, maybe not. It depends on a lot of factors. Shoot for a target score, not a target timeline/maximum amount of time you want to have to dedicate to LSAT prep to get it out of the way. People learn/improve at different rates. Your long term goal should be priority #1 over an ideal timeline you want it to happen in.
If you are talking about the chances of hitting that score on Monday after having studied for three months, you'll know if it was sufficient for you when scores are released.
