I was wondering...how long are the breaks in between each section? Does the proctor read the instructions for each section and give you a couple minutes, or does the next section just immediately start after the previous one. Thanks.

Almost immediately. You barely get enough time to reset your watch; I would say about 20 - 30 seconds

Alright thanks. I've been taking practice tests giving myself about a minute in between. I will change that.

If you're worried about resetting you watch to 12. One easy thing you can do is set it to 11:25 and then it'll already be at 12 for section 2. You'll have to reset for section 3 though.

I don't own an analog watch so I was just thinking about buying the 180 watch. Hopefully the proctors don't take it away.

180 watch (and other LSAT-specific watches) are made to adhere to LSAT rules, so they shouldn't be taken away, and if they are, it's a mistake on the part of the proctor.
