Outside of HYS, are most schools friendly to retakers? Will they take the highest score or average?

Some are more friendly than others. The NYU adcom still leans towards averaging scores unless given a good explanation as to why it shouldn't. Most schools lean towards taking the highest unless there's less than a standard deviation in difference.
I can't imagine an applicant with 160, 162 and 161 receiving the benefit of the 162. He will be considered a 161 scorer, which theoretically shouldn't make a huge difference. In reality, we know that the LSAT is being misused and adcoms are lazy.

In the T14, Cornell and NYU still tend to look at both. Although Cornell says only if they're within 6 points.
In the T20, University of Washington (not WUSTL) explicitly says they average your score.
YHS will take all scores into consideration, but some evidence on LSN suggests that it's not as much as people make it out to be. Y & S are enough of a blackbox to begin with, even 4.0/180s aren't guaranteed there.
