Do you get to choose where you sit during the test?

Or is it assigned to you? I prefer to sit in the back away from the proctor especially because I feel nervous if the proctor is staring at me when he/she is 5 feet in front of me. It's like he or she is watching my every move and is waiting for me to choke or do something illegal so he/she can just yank the test away from me.

Assuming this is a serious question, no. You don't get to pick where you sit. You are personally escorted to a seat. There's no method to where they will put you; it's at their discretion.
If you are truly focused on the exam in front of you, you will have no idea where the proctor is unless they are doing something distracting. If you aren't doing anything wrong, you should have no cause to be nervous.

Best bet, figure out what direction they're seating (back to front or front to back) and try to get in line at an appropriate time?

I got to choose in my test center. We were in small rooms of ~30 students each, and the proctor let us sit wherever we wanted.

In 2010, I got to pick my own seat. This year I was assigned a seat by the proctor. Same location. Just depends I guess.

I've seen proctors allow people to move if they requested. Just say you don't want to sit under an air vent, or that the girl next to you has a jingly bracelet or something, and ask for a change.

My concern is that I'll get put next to the one and only asshole who tries to sneak gum into the test.

This. My military background has inspired a similar preference. I told the proctor as much, and said I'd just stand out of the way until it was time. No fuss, no muss.
