I'm spending 90% of my time prepping for the LSAT and roughly 10% scouting schools, thinking about (not writing) my personal statement, and who I will ask to send LOR's. Where is everyone in this process? Should I be spending more time on my personal statement? Or should I devote all my time right now to the LSAT prep? Are you waiting to see how well you'll do on the LSAT before choosing schools?

Focus 120% of your time on LSAT.

How can you scout schools if you don't know what your score will be? And seriously, I stopped believing in softs cold. If you're not a URM, a VIP (a senator's kid or somesuch) or a unique case (had your 15 minutes of national fame for some reasonably respectable reason, are a successful published author though still in your 20's, etc.) your softs contribute no more than a few % to your chances of admission.

If you're a typical suburban male, don't think that a few months at some generic charitable organization will influence the adcoms much. Two extra points on your LSAT will be worth more in the end. So listen to pleasetryagain.

Devote all your time to LSAT prep, and if your still in college, keeping your GPA up.
