Does it make a difference and what are the thoughts on taking prep tests in chronological order vs. out of sequence?

I took them in chronological order old to new. The reason is that although the older tests are somewhat dissimilar to newer tests, they are still good for learning fundamental logic and reasoning. Its best to use these without paying too much attention to the score (or focus on raw score). Then, as you hit the newer tests with your fundamentals sound, you can better pick up nuances and know exactly where you stand on modern tests and most likely test day.
