I'm no expert, but it seems to me the only downside is that you wouldn't have the other schools for scholarship negotiation power with your preferred school.

There is no upside to doing this. The downside is that you can't further negotiate scholarships and it could cost you tens of thousands of dollars. You should keep negotiating.
