Which law schools DO NOT use the socratic method?
Which schools, if any, are known for not using this method of teaching?

None that I know of. Even if there are some, it would be a monumentally stupid reason to base school choice on.

Seriously, the socratic method is the easiest part of law school. What you really need to worry about is when you see a professor at the grocery store and they force you to recite the facts of Pennoyer v. Neff.
The crazy thing is, it doesn't even have to be YOUR professor! Each one gets a facebook of every incoming 1L and they are required to memorize it and quiz you whenever you make eye contact.
