Is there a difference? Is one worse than the other?

Deferred means you applied Early Action or Decision and you have been placed in with the regular applications. You are no longer bound to attend if accepted. Waitlisted mean you have been placed on a list of students and after deposits are due they will pull from that list. Waitlist is much worse. You can also be deferred and then waitlisted,

I have already been deferred to 2 schools, though, and I didn't apply ED (applied early Jan.). Weird?

Some schools defer students in order to address the rest of the applicant pool (Harvard comes to mind).

In my opinion, waitlisted and deferred are the same thing. Both make you wait longer than the rest of the original applicant pool to find out if you have been accepted. Both do not mean rejection. Both allow you to restate your case for admissions. The only difference is that being deferred usually means that you have not been accepted with the Early Decision applicants.
If you've been waitlisted or deferred do not give up.
