What counts as "public interest" law?

Many of the top schools emphasize committment to "public interest" careers. But what
exactly does such a career entail? This is a wide spectrum right?
For example, I'm looking into family law and education law. Are those public interest? Can they be in certain circumstances?

It's kind of a catchall term that I think is generally understood as working in the non-profit sector usually providing direct services to indigent clients. It may also include working for the government (though some do not necessarily consider this public interest though it is public service.) There are also private firms representing plaintiffs on consumer issues that are also sometimes described as public interest.

Public Interest = Non private practice + Non profit work
IE: Gov'ment: PD, ADA, US Attorney, DOJ, Jag, etc. Non profit work: IE UNICEF, Redcross, clowns without borders, etc.

What is the difference as non-profit and not-for-profit in this regard?
