When's the latest date I can take the 2018 MPRE? I'm starting biglaw in October. The March 2018 MPRE is scheduled on a day I can't take it, and the August 2018 MPRE is scheduled during my bar trip when i'm scheduled to be out of the country.

Can I take the test next November once i've begun work? Will this be frowned upon? What would everyone else do? Hoping to not have to move my flights and bookings around for bar trip.

Several people who started at my firm with me took the November MPRE. No one cared. You should be totally fine. Just make sure you study hard so that you don't have to retake it and delay your admission!
