Just wondering. I don't plan on writing out every type of essay, so it'd be useful to know.

I haven't come across a simple explanation but below are some links that show you how to format them.
I believe the most popular are the persuasive brief, objective memo, and letter to a client. Occasionally you may get a weird category- in Feb. 2017 we had a bench memo (list findings of fact + conclusions of law).

The first two briefs persuasive/objective would be written to a partner at your law firm informing them of the research/conclusions you have conducted based on the case file and any action they should take if the task memo asks for that.
