I worked abroad one summer in undergrad (doing a legal internship) for a Chinese firm that's since merged with another and no longer exists. It's been five years since then.

Do I need to get an affidavit as to law-related employment for them? How would I even go about doing this (emailing HR at the new firm?)? Has anyone been in this situation before?

Contact HR of the new firm by e-mail and by snail mail. Keep a record of all your efforts. The C&F Committee understands that this sort of thing happens, so you won't be SOL if you can't get it, but you should be able to show you made reasonable efforts to procure the affidavit.

The instructions say:

Inability to comply with any of the foregoing requirements for admission must be set forth in an affidavit
by you indicating any omission and stating fully the efforts made by you to fulfill the requirement.

Piggy-backing off of this, does anyone know for sure whether interning for a senator is law related employment? The position was called "legislative intern" and tasks were mostly clerical although there was some bill/legislation research involved.

I believe it is whenever you have to use lawyer-like judgment or skills. But, when in doubt, e-mail them and ask.
