I'm noticing everyone seems to do school -> clerkship -> biglaw. Is this because you HAVE to do a clerkship within a set time period after graduating/taking the bar?

I guess to be more specific, could I (assuming I managed to get all this), do JAG for four years and then do a clerkship?

Yes. In fact, some judges require post-grad legal work before clerking.
