Silly question - but how do UNC law students generally dress for class? Should I expect to dress business casual, jeans, sweats..? I'm trying to get a feel for what kind of atmosphere I can expect at UNC.

Well it depends.
On days you know you'll be called on (most professors tell you) you'll be expected to wear a suit, or at minimum business casual.
Most other days are business casual, typically with a nice briefcase or at minimum upscale messenger bag. Polos are a little too lax though. I'd generally stay away from short sleeves. Something like a nice, long sleeves button down shirt, possibly sweater vest, and khakis, with some dress shoes. You'll want to make as good of an impression as possible since you're in a professional school with other soon to be professionals (and your future coworkers). Plus you might end up needing recommendations from your professor, and you don't want them to think you're a slob.

the ratio of t-shirts to ties in an average law school class is 90 to 1.

90 t-shirts to 1 tie = a section with 90 students and 1 professor.
