Most law students graduating from 2009 through this year do not have any of these "offers" before they graduate law school. Many are still searching for jobs a year after graduating.
You DO want to have an idea of where you want to take the bar exam, though.

Relevant to my interests as well. Most large firms give out permanent offers to their summer associates at the end of their summer program, which is usually late July or early August. I do know of some firms which gave out offers via phone call a few weeks after the summer program was complete. Generally, SAs know by August.
I do know of a person in my summer class who summered in the NY office, but then decided he wanted to stay in Northern California and is starting in the Cali office.
