I thought you had to accept clerkships on the spot when offered? Is this just hypothetical?

In Chicago, each of these clerkships will carry the same amount of "prestige," whatever that means. But if I were you, I would think less in terms of prestige and more in terms of what you want to get out of a clerkship. For example, are you interested in doing trial work? If so, go to the Court with the most trial heavy docket. Are you more interested in having a chill year? Research the judges for whom you will be interviewing and figure that out.
There are much more important things to worry about than "prestige." Good luck
