clerkships?

Depending on class credit given, you'd be a 2nd or 3rd year.

do you do the kind of work people in those years are doing or are you essentially treated under the assumption that you know as little about what you really need to be doing as a first year (so lots of doc review, etc)?

Totally depends on the firm and practice group. It will be virtually impossible to answer this in any general terms. Clerks are valued because they end up knowing with way more experience than a typical 2nd year. Partners will take it into account, but to get an idea of the specific type of work you'll be doing, you'll have to reach out to the partners.

As always, it depends. That said, a friend of mine did a two year clerkship with one judge and a one-year clerkship with another judge right out of law school--three years of clerking. He was brought on as a 4th year at a biglaw firm.
