I suggest accounting for lawyers - a uniquely helpful class.

Absolutely take Evidence. Does your state offer third year practice certificates or equivalent? Make sure you are covering any prerequisites for that in your 2L year.
I'm assuming you're looking at biglaw lit, but still that should let you do a clinic where you might be able to appear in court. Also, if you can do a clinic as a 2L, look at things that would have administrative hearings - unemployment, public housing , etc. where a 2L can represent even without a certificate.

Didn't realize that. In which case, take every practical course you can and start getting experience. Start trying to get practical experience too - look at a DA or PD office (so long as you can find one that actually tries cases) or at a legal aid type place if they will supervise you going to trial as a 3L. Experience during your 2L year will make them and you more comfortable when you go to court as a 3L (again, assuming your state allows this).
Biglaw lit wouldn't expect you to be in a courtroom during your early years, at least not in first or second chair. At a smaller gig, they're more likely to need someone that can be productive quickly. I'd really focus on the prerequisites to your practice certificate and then on practical experience.
