Are there many public interest jobs in fields like tax, real estate, corporate law, etc.? Or is it mostly Con Crim labor and stuff like that?

Depends on how you define public interest, I guess. State governments hire administrative lawyers in tax, corporate, labor, and real estate since all those things involve extensive regulation. No six figure salaries, though.

In addition to state/local government for tax, you can also work for/start a Low Income Tax Clinic to help low income individuals and families get out of tax debt/do representation. The ABA Tax Section has a fellowship for recent graduates interested in public interest tax work.
