When do they teach you how to do useful stuff?

I'm a 1L. I know I'm learning skills tailored to litigation and I'm fine with that - I want to litigate. However, I also feel like every good lawyer should at least be able to do the following.
Things I want to know how to do:
Incorporate a company
Write a will and guide it thru probate.
When do they teach you how to do these things?

Incorporating a company is easy. it basically takes a signature.
there will be a class on wills.
these things aren't really practical though. you won't learn anything practical in law school.

1L should, at the very least, teach you how to research the answers to your own legal questions; as well as identify gray areas where the answers aren't clear and construct and evaluate arguments for both sides, the stronger of which (subject to subjective bias from underlying value judgments and first principles) plausibly leading to a reasonable resolution of that arguable question. If you're still waiting for some prof to spoon-feed you simple answers, then you're doing it wrong.

You'll learn all that at any practicums or clinics you take in the school along with internships over the summers and the rest will come during your first years at your job. I have a friend who is a partner at a huge firm in CA. He said when they hire a junior associate they do so knowing that they don't know what the hell they are doing and will take at least 5 years to learn the basics.
