Are there any courses of study (other than an MD) that would make an attorney better equipped for malpractice defense?

Just take a lot of practical litigation courses. Do a clinic that gives you some courtroom experience. No special coursework is needed that isn't already required by law school.

Medical knowledge itself won't help all that much- you have to hire experts anyways.

Malpractice cases don’t necessarily take any longer than other cases, but doctors, hospitals, and insurance companies often try to drag them out. Malpractice claims are often delayed because the doctor or hospital know they will ultimately have to pay... for more can read..
