Is one LOR too little?

Is one LOR from a professor when doing transfers too little? I'm part-time so I don't get to interact with a lot with the professors and take fewer classes. One of the professors refused to write a recommendation since he's the dean, so in the end I just have one LOR from a law school prof. I'm thinking about using some from my employers instead.

i plan on using 3: 2 professors and 1 from my former employment from after undergrad. i dont think you need to spam them with LORs but i think 2 could suffice.

I'm also using three, all from 1L profs: 2 doctrinal, and a writing prof.

At least at the schools I'm applying to, only NYU allows only 1.

So I had sent in 3 letters during my regular cycle and was waitlisted. They have my old file as well. I guess I'll ask my employers to send in some more, even though they will be very similar to the ones used during my regular cycle.
