Can think of good arguments for both. I would think that if you got an A- in the former's class, then that professor would be able to give you a "glowing review". Otherwise, I would probably go with the latter, unless you think you can still get a "glowing review" from the former.

Whichever one will write you the better letter.
Sure, it's nice to get an LOR from the professor whose class you booked, but definitely not necessary. All things equal, I'd go with the professor who knows you better, unless a different professor has ties with the schools to which you're applying (i.e. alumni).
