What are some midlaw firms and boutiques in NYC that hire SAs and aren’t grade sensitive? Preferably white collar/litigation but curious about this in general. Places like Schlam Stone and Robins Geller.

“NYC white-collar boutique” and “not grade sensitive” do not mix. The white-collar boutiques generally hire federal clerks.

You might actually want to try Boies Schiller. Their most recent wave of departures includes some white collar folks, so they want/need to plug that hole. And their multiple waves of departures/fall in prestige in the last 2-3 years, generally, suggests they can't afford to be very grade-sensitive like they used to be in the past. Might hit the sweet spot for you.

While this could potentially work, OP please note that this is a high risk high reward approach.
