Any recommendations for things to study prior to an AFPD interview? This is my dream gig, but I know very little about crim law and haven't done too much of it.

If you have access to PACER or the Westlaw dockets feature, then look up cases that the office has been involved in and read the briefs that the office has submitted. You also might listen to recordings of oral arguments if you can find them online. This will allow you to get acquainted with the legal issues that come up in the practice.

Maybe get hold of a crim pro outline or two and review them? Not to try to learn everything about crim pro or to try to fake any real knowledge, but just to give you some familiarity with major issues.
