If you start off in PE/ECVC/M&A/finance and realize that you want to switch to another corporate practice, how hard is it to transition? ex. start off in PE but later decide you want to do ECVC work

PE to ECVC is pretty easy to switch. Lot of overlap.

Is the switch from PE different than the switch from M&A?

This depends entirely on what the practice areas are and when you attempt the switch. Not worth discussing in the abstract except to say that you can generally switch to anything in-demand as a junior.

Most associates do a mix of PE/Private Company M&A and public company M&A. My guess is the former is better for switching to EC/VC. Public companies are more likely to have straightforward capital structures, whereas private companies that are backed by PE/VCs have all sorts of monopoly money that they're handing out to every Tom, Dick and Harry who enters stage left. The concern in both arenas is the rights and privileges of new parties versus those of existing parties.
Public company M&A is more concerned with investor disclosure and securities-related matters, which is helpful for when your EC-backed company IPOs, but at that point, they'd rather just hire a securities counsel who can also handle private offerings.
