I'm not an expert here, but I work at a video game company that has 15-ish lawyers in-house at the HQ, and 4-5 of them are employment-focused. I imagine that proportion bodes well for your in-house dreams. Seems like they generally came from general employment litigation backgrounds, though what they handle now definitely goes way past litigation into most things employment-related (like handbooks, contracts with ICs/work-for-hire type things, COVID policies and company reopening plans, etc.).

If you wanted to work at a large public company, I'm sure there's always be a need for employee benefits/exec comp-related people if you'd prefer to deal with transactional employment law work. Everyone I've ever known in that field has had a ridiculously easy time moving around, it's just something I don't personally find interesting.

Day-to-day counseling issues (employee policies, sick leave, FMLA issues, ADA accommodations, terminations), employee investigations, EEOC charges, employment agreements (including restrictive covenants), and wage and hour issues for the industry you’re targeting. Once you go in-house, the focus will be more on counseling issues and pre-litigation matters. Look at some job descriptions on LinkedIn for a better idea.
