Staff Lawyer jobs at Legal Aid & non-profits

Most of the advice here is centred around landing Big law and private firm hiring. Staff lawyer jobs with Legal Aid and other public interest places seem to be fewer in number and quite competitive. Most job postings I see ask for experience. Any advice in this regard, as well as how government (such as the DOJ) would view the experience to lateral. Thanks.
