I'm at CBNY.

Assuming you're corp, this is obviously STB (and I like CBNY, generally). Even if you don't stay there for more than 2-3 years, it's undoubtedly a better place to start.

Litigation, not sure.

I'd like to jump in and ask how CBNY corp is generally; I received an offer and was wondering how you like it. I value fit moreso than prestige or exit options.

Then I'd say Cov >> STB
I haven't seen STB in litigation space much tbh...

But if Corp, then STB >> Cov

people are pretty great. if I have issues with the firm they're almost all practice-related i.e. the client base isn't the most diverse industry wise, likely cause the firm's regulatory strengths play a role in what work comes.

if you want a better sense of fit I would just reach out to juniors or midlevels and ask if you can talk to them about their time at the firm, but I think people would generally say it's a good and healthy place culturally. Not perfect obv, like as an example I would say that certain groups/partners have a tendency to hog associates.

Staffing is pretty lean because it's not the biggest corporate practice headcount wise, so you'll get lots of repeat interactions with people. I haven't worked with anyone where I would be like fml if I got staffed under them again.
