Does anyone have any insight on what it's like in-house at WeWork or Knotel? I'm considering an opportunity as a midlevel and can't find any insight or impressions on what it's like. Anything re: hours, culture, workload, stability, would be appreciated.

I recently interviewed at one of the two you named, also as a midlevel in NYC.
The culture seemed pretty good in that there were a lot of young, like-minded people. This has some downsides though - the attorneys I interviewed with noted that a lot of the business folks are on the younger side, so it can be a bit like herding cats.
Hours seemed heavier than other in-house positions. One of my interviewers said they get out at 730 most nights which seemed odd, but no weekend work so that's a plus. But then another interviewer told me they work every Saturday ("by choice" so take that for what you will). Also if you look around on Indeed/Glassdoor for at least one of these companies, you'll see the number one complaint is work-life balance. I saw someone on there say they had an 11pm meeting that went on for several hours.
Every person I spoke with said their workload is pretty heavy, but they were hiring for a lot of openings in Legal so I suppose they recognize the problem and are looking to alleviate.
On stability, these are both startups but are doing well-enough. The folks I interviewed with understood the company was dynamic and changing every day, so stability on a day-to-day basis is unlikely, but a lot of people see that as a perk as it keeps things different.

Salary is around ~$160-180k range with ~20-25% bonus, depending on experience.
