How to Frame a Next Step E-mail?

I'm a 1L. I'm going to firm receptions and am meeting a lot of attorneys, some of whom I click with very well.
When I send a follow-up e-mail, what should I be asking for? Should I ask to meet them for coffee and talk more about their work and their firm, or do I simply thank them for their time?
What can I do to cement myself as someone worth working with in their mind?
