Don't want to do securities litigation but interested in financial sector in general. Pros and cons of either in terms of substantive work, mentorship, opportunities?

USAO doesn't hire entry-level law grads/3Ls. Many AUSAs have several years of state prosecutorial experience before jumping to federal. Just something to consider.

It won't make a huge difference IMO. But I would think SEC is good for learning about finance. Honestly both are great.

I’ve heard SEC is harder to get, ergo more prestigious. I’d say go with that if you are interested in learning about finance.
