I have learned it's good to send the cover letter in the body of the email when mass mailing, but I am unclear as to whether one should attach simply the resume (which includes GPA #) OR the resume (including GPA) in addition to a transcript of classes.

I'm sending a transcript as well simply to vouch for my purported GPA. Because we aren't attaching a cover letter, two attachments is a reasonable number to send with the email imo.
