Skadden (NY) vs. Simpson Thacher (NY)
Have offers from both Skadden and Simpson NY. Interested primarily in exit options. Thoughts?

Exit options in what? I think most here would counsel you that these firms won't provide any measurable degree of difference in exit options unless you have a specific practice area of interest that one excels in more than the other.
Do you not have a preference for the type of culture at these two firms? Over 2-4 years, that'll make a much bigger difference in terms of your happiness (which would affect your career perhaps more than you realize).

Well, M&A at these firms are at least wildly different and the exit options will track on to these differences.

And you didn't like one visit better than the other? Have you revisited? What type of personality do you have? Are you the type to want to go out and get drinks after work and pretty extroverted? Or are you more introverted/reserved? These are general stereotypes, but I found them surprisingly pretty accurate based on my experiences with these firms.

In that case then don't worry. Provided being a lawyer (at a big law firm) generally agrees with you, then you will learn a ton, meet people who can be valuable to your career later, find good exit options, etc., out of either of those places. Forget about trying to pick which one has better exit options and try to figure out where you'd be happier; if you're happier you do better work, will last longer, will get more and better experience, and therefore have better exit options.
