I'm terms of prestige, who's better? Who gives better exit opportunities? Anyone have inside knowledge about their culture at the LA offices?

I know nothing about that market at all so no idea, but I do recall Sidley la poaching a Corp rainmaker from stb la. That's about all I got haha

They're kind of night and day experiences. Sidney has a pretty big office in LA and is expanding. STB is small (~30-40 attorneys). Seems weird that you would be picking between those two.
