Lateral process - how does it work?

I am interested to learn more about this process, in particular in IP fields (both prosecution and litigation)
I am currently trying to decide between SA offers from (1) so-so big law with good life/work balance, (2) good big law with no such balance, and (3) good IP boutique with good life/work balance. I just cannot decide, so I want to know more about later possibilities of switching between them.
Are lateral opportunities typically from networking, MM or both? Are such opportunities quite limited, or plenty?
How do firms evaluate a lateral application? Do they still consider law school prestige (I am from a regional school -- am I still have the geographic limitation as I experience right now), GPA, or only the prestige of the previous firm? Will it be the same screener--call-back type of interviews?
Do I have better flexibility going into either of the three current options?
