If you summer at a firm and they ask you to provide an updated resume before starting work full time, should you list the summer associate position in the resume? And what would you even list under the bullet points listing what you did that doesn't sound douchey?

Yes, list the summer associate position. But there's no need to list bullet points underneath. You just need the firm, your job title, and dates.

So it's not weird not to have bullet points for that position if you have them for everything else?

No. For example, I don't have bullet points for my clerkship (because everyone who works in legal hiring knows what a judicial clerkship is) but I do have bullet points for my pre-ls work experience.
