I know this is last minute, but I have a callback tomorrow with a firm that is a bit of a reach for me. I really hit it off with the partner doing the screeners and I got my foot in the door. The firm is MAJORLY transactional, with a prestigious restructuring/bankruptcy practice.

I'm meeting with the hiring partner first thing in the morning, so I want to be sure to put my best foot forward. I just recently secured an externship with a prominent U.S. Bankruptcy judge in the same city that the firm is located. Although it is future employment (will be over the spring semester), should I list it on my resume and bring an updated resume with me for each interviewer? I'm guessing the bankruptcy experience will only add to my candidacy.

Any thoughts? Is it annoying to walk in the door with an updated resume, or will it be well-received?

No, jesus, absolutely bring it. And mention it first thing. "Oh, I see you have my resume there, but can I give you an updated version? It's mostly the same except that I was just selected for this really exciting [whatever it was you wrote]."

It's fine. Just ask the HR host / interviewers if they would like your updated resume. Gives you a chance to talk about the externship since they will inevitably ask what's new about this resume version.
