4 CBs. Assuming I get offers, where should I go full-time?
I'm looking at DPW, Skadden, GDC, and PW NY. I'm up in the air as to if I want to do M&A, litigation, or antitrust. Is there a firm or two that'll best to hedge my bets? Does one create substantially better exit options (probably antitrust or M&A) than the others or just offer better training for the 4-5 years I can rely on being their?

You have callbacks at four of the best firms. Go to all of them, unless you have an offer you know you will take.

Honestly not intending to hurt feelings. I'm legitimately looking for advice because I have no clue which of the 3 things I want to do, so can't really make a solid choice. Of these, I would choose Davis Polk unless it's Gibson LA - then it's a regional tossup. If you're 100% litigation, maybe Paul Weiss edges out, but that's not what you've indicated here.
I agree with the others that it's premature to count on offers at all four, not to mention any. This varies from firm to firm. Davis Polk, for example, will CB a shitload of people and offer less than half of them; Gibson even fewer; if you were going to a SullCrom CB on the other hand, I'd say you could almost always count on the offer.

Your title says "4 CB's". Now you are saying you have offers. If you tell us the offers, we can tell you what we think between them. I'd agree w/ bagel that DPW is probably the best of the 4 all around, though if you want lit maybe PW. Also PW lets you do whatever you want over the summer where I think DPW makes you choose lit v corp. Not sure how the others work, I forget. So think about that - if you are REALLY undecided, go where they are flexible.

Skadden is also a good choice. Great lit group, powerhouse M&A group. Antitrust tends to be sports heavy. You can take SA assignments from whichever groups you want.
