how to compare quality of work at firms?

I've heard tons of anecdotes at each firm I've interviewed at, but anecdotal evidence really isn't enough to help me compare these places. Probably my top priority is to develop my skills by performing substantive legal work early on (whether for paying clients or pro bono), but how do I know which firm will have the most such opportunities? Is there any way to find actual data, like percentages of time that young associates spend on various tasks, or is that a complete pipe dream?

Looking at associate:partner ratio is probably the closest you're going to get.
