For someone who wants to do litigation (not necessarily appellate, and not limited only to antitrust/securities/financial stuff) which is the place to go? Taking into account things like how much stand-up experience juniors get, how much substantive writing responsibility, etc.

Gibson has the widest ranging practice and largest office. You're probably best off there.

PW DC is best if you want to work on a lot of trials, although you will not get much stand-up experience as a junior associate unless you work on pro bono matters. Not sure how Gibson and Cleary compare re: stand-up experience, though.
