Been fortunate to have a couple of clerkship interviews. Wondering what the standard method of rejection is after an in-chambers interview with the judge; do chambers typically call, email, or snail-mail rejections?

I think snail mail is most typical, but I got one by phone as well.

It depends on the judge. I think email is more typical, but my judge prefers to call each person rejected to give them some words of encouragement (i.e. you were a really great candidate, but the competition was fierce, etc).

My judge sends a snail-mail rejection once he has hired all four clerks. I know some other judges don't bother with a rejection at all. You could try calling chambers for an update if it's been a while with no answer.
