0L here freaking out about job prospects!
I just completed a masters of public health program and will be starting law school in one month!! One of my professors mentioned that she had attended a lecture given by an attorney specializing in health law (as of now, this is what I'm interested in) and suggested that I try to contact that attorney. This attorney works in one of the largest law firms in my state (where I plan to live for the rest of my life) and is very established.
Should I? Before school starts? How should I approach it?

Re: Informational Interview?
If you talk to him before December 1, don't expect him to get the ball rolling on a job application, because 1Ls can't do much of anything on the work search before then.

Re: Informational Interview?
You could just meet with him for information then pump him for job info/hookups later in the semester.

yup, what peeps said. find out about the practice area, see what they do, come to the interview with interesting insights; show interest in the field and enthusiasm for entering it. later in semester hit up again to talk about places to apply; ask him about their process during that convo.

What rad said.
But I think 0L informational interviews can be good because it looks a little less like "GIMME A JOB!" and you can play the whole naive 0L looking for advice card.
