Include school's median GPA on Resume?

Putting my
law school gpa on resume, should I also include what my schools target median GPA is? I have a 3.5, which is probably top third, but will firms know that without the median reference point? Was going to do something like: GPA: 3.5/4.3, class target mean: x.xx

No, because you would be guessing and you should never do that - even if the school lists a target gpa.
The firm most likely has hired someone from your school before, so they know that a 3.5 is good. In fact, 3.5 is generally around top 1/3 at the most grade inflated law schools. Thus, no one is going to see a 3.5 and assume that you are around median or below, if that is what you are worried about.
