I'm a little hazy on the whole timeline post graduation. Assume full time offer from a Vault 100 firm after 2L summer. I know the NY bar is given in July.

Do most people who are moving to NY from an out-of-state school move to NY immediately after graduation and then study for the bar in NY? After taking the bar in July, when do most associates begin work?

For bar studying, I believe that there are plenty of courses that are exclusively online, so you can study from anywhere. The prep companies may also offer classroom-based courses at your law school--this is true for UVA, and I suspect it's true for any school that sends a significant number of graduates to New York. So there's no reason to move somewhere new unless your lease ends early.

For starting work, this varies by firm. Some give you a choice of September, October, or November, and others simply assign you a date. A while ago start dates at some firms were pushed back to January as a result of the recession, but I believe (I might be wrong) that this didn't occur for the class of 2011.
