When would be a good time to look for housing in Manhattan, particularly the village? Looking for a three bedroom place from an NYU student.

Generally, nothing is available in NYC until a month before your move-in date, and realistically more like 2-3 weeks before. It sounds like you're talking about a short term sublet, though?

Yeah just for the Summer... that seems like a really short time.

Sublets are a little different. There aren't really any rules, things just become available as people know they'll be gone. If I were you I'd start casually searching craigslist and reaching out to people you know in NYC, and looking more seriously toward the end of the winter. There's always the NYU law dorms.
