After accepting?
Wait for paperwork of some sort?
How's if I only have an emailed offer letter and not physical one yet?

I think there's some sort of rule that you can't have more than 5 offers open at once. I would do it as soon as possible just out of politeness. But I admit I haven't withdrawn from some of my firms yet because I'm somewhat dreading the conversation :P

I waited until I had 1) a written offer 2) confirmation from the firm I accepted.

Ok. I did. And the conversation wasn't at all weird. I thanked them, they thanked me. They invited me to keep in touch.

An e-mail to the recruiting person is perfectly sufficient. This is a job search, not ending a long-term relationship.
