Some of the firms have provided us with who will interview us at OCI, and I imagine this will help the interview flow more smoothly.

Is it appropriate to call/email the firms that did not provide us that info and ask who the interviewer will be?

Why not? ask the recruiter.

Completely appropriate. They may not have decided yet because of schedules and availability, though.
